Make Ice Cream Not War!

Try These Easy & Healthy Recipes

Ghost Betty Crocker and try some of these delectable, kid approved healthy recipes. If you're like me, you haven't put the fork down since the pandemic happened. A plant based diet is not only lower in calories, and higher in nutrients, but it's also environmentally friendly it's an all round win win!

We made banana ice cream @ home and it was easy, and tasty!


You will need 

4 frozen sliced banana's (freeze them for at least 2 hours).

1/4 cup of buttermilk.

1 teaspoon of vanilla extract (optional).

Directions

Toss the above ingredients in a food processor, or blender until ingredients are creamy about 2-5 minutes.

Transfer mixture to a bowl and place in freezer for 20 minutes then serve immediately.

*Note eat ice cream within 2 hours for optimal taste. 

Add some flare by making a decorative flower with apple peels, canned peaches, and a blueberry. My son loved this ice cream, and since it's basically fruit it's a healthy, guilt free dessert!

Eat More Veggies!

Does your kid hate squash, zucchini, carrots, and red peppers? Mine did until with made these baked veggies served with ranch dressing on the side. I barely had time to photograph the plate since my husband and son kept eating the vegetables.

You Will Need

1 Red Pepper

1 Zucchini

1 Carrot

1 Squash

2 Eggs Beaten

1/2 Cup of Bread Crumbs

Directions

Julian vegetables (cut lengthwise)

Place beaten eggs and bread crumbs in separate bowls.

Dip vegetables in eggs then bread crumbs and transfer to a well oiled baking sheet.

Bake until brown and crispy about 45 minutes or less.

Wrap Filled With Veggies

Saute some of your favorite vegetables, I used eggplant, zucchini and squash. Take a tortilla, sprinkle it with grated cheese, and place grilled veggies inside with a spring salad mix (I used kale, chard, spinach). Wrap tortilla into a burrito and toast in a lightly oiled pan until brown. Serve with fresh fruit on the side delish!


Cool Down With Jello & Watermelon!

Directions

Slice a watermelon in half, and remove most of the watermelon and transfer it to a bowl.

Mash watermelon.

Make cherry flavored Jello, and mix mashed watermelon with jello.

Place your Jello/watermelon mixture into watermelon shell and refrigerate until Jello sets about 4 hours.

Result- A mouth watering dessert that's low calorie and fun.

Kids can help make all of these recipes. Teach your children the value of healthy eating by comparing the nutrient and calorie content of the above meals compared to store bought ice cream for example. Show them that healthy can be tasty, it's just a matter of planning and creativity. Enjoy!
