Cheap-and-Easy Lentil Soup

One Pot Wonder!

4 Reasons to Love Lentil Soup

-7 Grams of Fiber 

-13 Grams of Protein

-0 Grams of Saturated Fat

-Only 194 Calories Per Serving

I love it because it's cheap and easy to make. You will need these 9 simple ingredients:


Half an onion chopped.

2 carrot sticks chopped.

1 celery stalk chopped.

A bag of lentils (or 2 cups).

1/4 cup of olive oil.

6 cups of water.

1 can of beef broth, (chicken or vegetable broth if you prefer). 

Salt to taste.

Crushed red pepper to taste.

*Optional: 2 bay leaves, and one can of diced tomatoes.

Throw all of the above ingredients in your slow cooker for 6 hours on high. This soup will smell magnificent and makes 12 servings. It costs about as much as a can of soup. The best part is that this soup can be reincarnated and make a great pasta con fagioli (bean pasta) the next day. Just add the lentil soup with rotini pasta and olive oil. I even add leftover lentil soup to frittatas.
